My plans to go horseback riding over the Easter Holidays did not pan out. First, it snowed all weekend and secondly I had the flu. After dosing myself with Sudafed on Saturday I did get in a short ride on my new Mare Teacup but blizzard conditions on Sunday kept the horses inside. Lucky we did not plan an Easter Egg hunt outside
Easter Sunday was our last day of sugaring at Cherry Tree Hill. My husband Terry flushed the pans and boiled the last of the sap which yielded our lowest grade of syrup, but also the tastiest. We poured it over vanilla ice cream while it was still hot. This B grade syrup is a favorite of the locals but probably something you would never get at the grocery store or in a restaurant. Many people in Vermont use it for cooking or in place of sugar.
Our barrels of fancy grade syrup will make their way to Maple Grove in St. Johnsbury where they will be processed and sent to Cracker Barrel restaurants. Our big boys Doc and Otis are happy to be done with sugaring for another year and so are well all. It marks the beginning of spring. Now if it would just stop snowing!
